How about taking part in the Arizona Quilt Challenge? Use any pattern that suits you, or construct it from one of the quilt patterns on About.com Quilting. It's fine if you don't finish your quilt by the original "deadline," I'd love to display a photo of your quilt no matter when you decide to put it together.
